Brazil



Another World Cup is here!  That means a 32 day whirlwind tour of the world's cuisine.  As is our custom, we start with the host country.

Brazil won the opening match 3-1 against Croatia, with what was an absolutely amazing flop by Fred to get a PK and go up 2-1. 

We made Moqueca De Camarão.  This dish is a Brazilian shrimp stew, made with coconut milk and dende oil.  It is rich and flavorful, and was a great kickoff to the 2014 FIFA world cup cooking.



I peeled and deveined the shrimp, mixed with the juice of a lemon, minced garlic, salt and pepper and set aside.



I finely chopped the onion and bell pepper,  then sauteed in olive oil.




I blended the tomatoes and added them to the pot along with salt, some cilantro, and some cayenne pepper, then cooked it down for about 15 minutes.  I added coconut milk, brought to a boil then added the shrimp mixture.



Once the shrimp was cooked, I took it off the heat, added the dende oil and more cilantro, and served.





For dessert, we made creme de papaya. Vanilla ice cream and half a papaya blended together, served with a shot of creme de cassis poured on top.  It was delicious.






A great start to the World Cup!
